NUTRITIONAL PROPERTIES OF SOME FUNCTIONAL CEREALS’ EXTRACTS AND FRUIT JUICES

The present study aims to determine the chemical composition, vitamins, minerals, antioxidant activities of barley extract, flaxseed extract and (pumpkin, apple, pineapple and pomegranate) fruits. Sensory characteristics of drinks containing 25% barley extract, 25% flaxseed extract and 50% (pumpkin, apple, pineapple and pomegranate) fruits were determined. Also the effect of feeding rats produced drinks on liver functions and kidney functions against diabetes induced by streptozotocin were studied. Thirty five male albino rats of Sprague Dawley strain were divided into two main groups, the first group (A) (n= 5 rats) was fed the basal diet only as a negative control group (–ve) normal rats. The rats of the second main group (n= 30 rats) were intraperitoneally injected with STZ at dose (50 mg/kg) to induce diabetes and fed on basal diet (BD), then diabetic rats were divided into 6 sub-groups (B, C, D, E, F) (5 rats in each group), group (B) the positive control group (+ve) was fed the basal diet and five other groups (C, D, E, F, G) were fed basal diet + 1 ml/day of produced drinks orally for eight weeks. Results revealed that feeding the fruity barley-flaxseed drinks improved significantly (p<0.05) liver enzymes and kidney functions in serum of all diabetic rat groups compared with the positive control group (+ve). In addition, the fruity barley-flaxseed characteristics were acceptable by the sensory panel. Hence, barley, flaxseed and selected fruits is good for use as antioxidant and anti-diabetic enriching agent in drinks production.
